The Program of Food Science and Nutrition was established in 1961 with only one class of students. Because of the widespread interest in enrollment, the student body was increased to two classes every year starting in 1965. After Shih Chien Home Economic College became Shih Chien College , the program was renamed the Department of Food Science and Nutrition.

As the college further developed and became Shih Chien University in 1995, the Department of Food Science and Nutrition attracted more students from diverse backgrounds. In 1998, the department started to admit part-time students who were graduates of three-year vocational colleges. The graduate institute was established in 2000, and the two-year on-job-on-campus class was established in 2001. As the development of biotechnology and the transformation of department, the department was officially renamed the Department of Food Science, Nutrition, and Nutraceutical Biotechnology in 2004.
